2015 De Salis ‘M’: 62% Merlot, 25% Cabernet Sauvignon, 13% Cabernet Franc; The 2015 spring was cool and dry and developed into a lovely mild and dry summer, staying dry until Xmas, autumn was warm with clear crisp evenings bringing great acid and precision. The fruit for the De Salis ‘M’ was de-stemmed and whole berries fermented separately in 1.5 tonne pigage pots with hand plunging followed by post ferment maceration for 3 weeks.
The De Salis ‘M’ was matured in 40% new French oak for the first year – second year all older French oak. The ‘M’ nose has dark cherry, cassis, raspberry and shitake mushroom. A soft juiciness of fresh plum with a touch of rhubarb, hints tobacco leaf on the textural mid palate and a long fine tannin finish. Cellaring 10 + years. $38.00
